I have a few problems with the word sustainable.
Partly because it sounds like a word that's used to gloss over things that are really not environmentally ok at all, like "sustainable trawler fishing" or "sustainable coal mining". (Believe me - I'm an engineer, I know about these things.)
But mainly because it's a word that sounds like it carries a lot of responsibility. When applied to something as basic as food, that responsibility can thud on your shoulders and weigh you down when really you just want something to eat.
So this is not about sustainability. It's just doing the best you can to leave the world not too much worse than when you found it. And without giving up the really important things, like chocolate macarons.
